After watching Heat Seekers on the Food Channel, I have been craving something hot and spicy. And since it has now become customary for me to tell my friends Rachel and Lauren from work what I am going to make for dinner, I made good on my promises and made two things blazing hot: Jalapeño Poppers and Buffalo Shrimp. Both of these dishes feature panko bread crumbs.
For the poppers, I just halved large jalapeño peppers removing the seeds and membranes. Then filled them with a mixture of cream cheese and habañero cheese with a dash a ghost pepper sauce thrown in for good measure. I told you this was going to be hot! Then I breaded them in the panko and baked them in the over for about 1/2 hour.
The buffalo shrimp were even easier. Bread some shrimp in the panko seasoned with some Cajun spices and fry in a little bit of oil. Toss with your favorite hot sauce (here I used Franks Extra Hot Buffalo sauce) and serve with carrot and celery and of course blue cheese dressing.
