In honor of my upcoming trip to Mexico, I have made what I am calling a Ziggurat of Kabobs. It’s fresh corn and eggplant from the Forest Hills Farmers Market (Friday’s from 4:00 until 7:00 in season), plus onion. I have seasoned it with smoked salt and pepper. And then glazed it with a lime and hoisin sauce. I have to say the corn was extraordinary. You can really taste the lime and hoisin sauce. I wasn’t as thrilled with the eggplant. I am not a big fan of eggplant to begin with.
What you can’t see is inside of the “ziggurat”. There are three steaks grilled to perfection. Just like a Mayan pyramid, you don’t know the treasure until you explore the ruin.
